Diets & Fasting
This course provides an analysis and evaluation of various dietary regimes. It focuses on the nutritional, spiritual, and social aspects of food beliefs: Vegetarianism, macrobiotics, raw food, food combining, and hereditary predisposition. It explains the benefits of fasting and the different approaches used to ensure tissue cleansing and detoxification. It finally considers the mental, emotional, physical, and spiritual issues related to diets and fasting.

Proteins & Carbohydrates
This course studies proteins and carbohydrates and describes their metabolic and physiologic concepts, functions, and structures. It considers the proteins and carbohydrates composition of food products, their requirements through the life cycle, the quality of proteins, protein deficiency, carbohydrates physiological importance, low carbohydrate diets, glycemic response to foods, and inborn errors in carbohydrate and protein metabolism.

Lipids & Fats
This course overviews lipids and fats, the composition of human fluids and tissues, their metabolism, their effects, and physiological functions. It examines the effects of diseases on the molecular structure of lipids and the ways their changes can be reversed through proper nutrition.

Vitamins & Minerals
This course examines biologically essential minerals and vitamins and their absorption, transport, function, storage, excretion, imbalance, deficiency, and toxicity. It considers the dietary sources and role of minerals and vitamins in health, and the role of modern food technology on the availability of these nutrients in our food supply.

Human Nutrition
This course examines the properties, functions, requirements, interrelationships, and metabolism of nutrients, and the nutritional needs throughout stages of the life cycle including pregnancy and lactation, infancy, adolescence, and aging. It deals with the socioeconomic, cultural, and psychological influences of food, nutrition behavior, food safety, and biotechnology.

Digestion & Metabolism
This course discusses the principles of digestion, absorption, and nutrients metabolism as well as the role of vitamins, minerals, and enzymes in these processes. It enumerates the essential micronutrients used in human metabolism and the effects they have on restoring and maintaining the biochemical balances of cell and tissues.

Oligotherapy
This course explains how to administer precise amounts of oligo elements to treat different health disorders. Oligotherapy works upon the cell's enzymes by introducing precise low level amounts of specific trace elements which serve to detoxify and reactivate blocked healthy enzyme processes. These elements restore the normal functioning capacity of the cell and enables the body to utilize essential vitamins, minerals, and other nutrients to obtain the right healing process.

This course considers the influence of maternal and infant nutrition on the health of populations, and the nutrition-related physiological, psychological, and social factors in pregnancy, lactation, and infancy. Biochemical Organic Balance
Every disease, symptom, discharge, and pain indicates a chemical imbalance in the body. A body that is chemically well-balanced will normalize itself. This course focuses on the chemical elements, their structures, and their application, including vitamins, enzymes, proteins, starches, prostaglandins, and minerals found in foods in order to understand the biochemical organic balance from which health and well-being spring.

Food Chemistry
This course explains the relationship between food composition and properties as well as the physico-chemical changes food undergoes during processing, storage, and consumption. It examines the physical and chemical methods fused to analyze food, and uses common food to highlight the complex relationship between the physical and chemical properties of food.

Food Processing
This course discusses the methods used to preserve food namely cooling, freezing, heating, dehydration, concentration, irradiation, fermentation, and chemicals. It highlights new trends in food preservation and explains the molecular structure of major food components and how they are altered by processing and preservation.

Nutritional Assessment
This course reviews the dietary, clinical, and biochemical components used in the assessment of a person and/or group's nutritional status. It discusses the interrelationships between these nutrients and their effect(s) when subjected to varying levels of nutrient intake. It provides detailed protocols for the nutritional assessment of various situations. These protocol describe clinical definitions, causative/ contributory factors, protective factors, assessments, and therapy for each condition.

Nutritional Intervention
This course presents the nutritional therapeutic applications in the prevention and treatment of common diseases and disorders. It describes therapeutic diets, dietary manipulation, and dietary supplements used to help restore the normal physiological function and structural integrity of the body and its organs by providing its natural components. It explains strategies, counseling skills, and diet modifications to prevent and manage disease.

Nutrition in Aging
This course examines the interactions of nutrition with behavior, growth, and development of human populations and individuals; from infancy to adulthood and later years. It considers the physiological, psychological, social, cultural, and economic factors affecting nutrition in aging as well as the evaluation problems and strategies for health interventions.

Orthomolecular & Scientific Nutrition
This course analyzes disease etiology (causation) from cell and tissue nutrition-based perspective. It overviews the organic deficiencies and malnutrition caused by a typical modern diet that imbalances our biochemistry. It explains how to recognize these deficiency signs and symptoms and identify good nutritional sources and available forms of dietary supplements for good health.

METHOD OF INSTRUCTION: Distance Learning Higher Education

 

This distance learning education program is completed by a traditional correspondence instruction method. Once you sign up for the course, Bircham International University will send you (to your mailing address) the suggested textbooks. After reading the book, you will be asked to write a 20 to 35 pages report that reflect your understanding of the book. This report is equivalent to the exam and can be submitted by email or mail. Bircham International University will evaluate your written work. If passed, BIU will issue the corresponding diploma. For a program of 21 credits, the estimated time for completion is 21 weeks. For 45 credits, the estimated time for completion will be 45 weeks, and so on. Calculations are approximate. The length of each distance learning degree program is calculated based on an average of 15 hours of learning per week.
